How Israel produces black caviar

Black caviar, which was once one of the "most Russian" brands, becomes an international product. So, several years ago, Israel entered the top three of world exporters of sturgeon caviar.
Israel and black caviar. Strange? Yes, but Israeli companies today supply sturgeon caviar to the United States, Europe and, most surprisingly, to Russia - a country that can be called the world center of sturgeon. Creating a special branch of the fish industry - breeding sturgeon and sturgeon caviar - Israel is obliged to come from Romania. In the 90s, they decided to grow trout and sturgeon in Kibbutz Dan, which specializes in breeding different varieties of fish.

The company was established in 1992, when Igal Ben-Zvi brought fertilized sturgeon caviar from Russia. In the photo: a kibbutz worker holds a female sturgeon.

Now more than 70 thousand sturgeon live in several ponds of the kibbutz. Most of them are about 12 years old. Each fish brings about 2.5-3 kilograms of caviar. In the photo: the reservoirs are ready to launch the sturgeon.

The source material — the fertilized spawn of sturgeon, or fry — was obtained from Astrakhan and other cities of the Caspian Sea. Large sturgeon were raised from them and, using modern methods of ichthyology and fish farming, they created such a volume that Israel became an exporter of sturgeon caviar, also called black caviar, under the brand name “Galilean caviar”. The project has invested 40 million shekels. The market is very promising, only in the last two years, the volume of sales of Israeli caviar abroad has increased 10 times.

Salman Marjage, a fish farm worker in Israel: “Before we get caviar, we arrange a test for all fish over 8 years old. We need to make sure that the roe is ripe. We make a small incision in the stomach and extract the eggs with the help of the probe. Here we see eggs less than three millimeters, we must wait another six months. Release the fish back to the pool. ”In the photo: biologists employed on the farm to check the quality of caviar.

The company has passed the most difficult stage - the formation of a population of sturgeon females to reach puberty and spawning. It takes 10-11 years. During this time, world prices for caviar have risen from $ 500 to $ 4,000 per kg. In the photo: slaughtered fish is thoroughly washed before removing caviar from it.

Scientists are surprised - in the Caspian the sturgeon begins to spawn only after it reaches 13-15 years old - puberty. Apparently, the climate of Israel, and perhaps some technologies that the Israelis do not disclose, reduced this period by 3-4 years.

The main producers of caviar are Russia and Iran. The main poachers in the Caspian are Russians and Azerbaijanis. It is here, upon returning from spawning from the Volga to the Caspian, that the population of sturgeon is significantly reduced. Another 10% is harvested in southwestern France, in the rivers of the Bordeaux Valley, where sturgeon fish come to spawn. In Iran, poaching is severely punished. Sturgeon almost does not reach Turkmenistan.

Over the past 15 years, the sturgeon population in the Caspian has declined 40 times. Due to an environmental disaster, the price of a kilogram of black caviar on the world market has grown from $ 500 to 5 thousand. The reason for the avalanche-like price hike is a ban on sturgeon fishing in the Caspian Sea basin, where 90% of all black caviar in the world is harvested. From August 1, 2007, a ban on the production and sale of black caviar was imposed in Russia for 10 years. In the photo: black caviar close up.
